The beauty of a salad lies in the fact that there are no specific rules for composing it, other than freshness and lightness: with Mista Mancini, the most common side dish
becomes a tasty and unusual first course.


Ingredients

2 servings
  • 200 g (0.44 lb) of Mancini Mista pasta
  • 5 g of salt per liter of water (approximately 1 teaspoon per quart of water) based on pot capacity
  • 1 head of romaine lettuce
  • taggiasca olives
  • 30 g spreadable cheese (such as cream cheese or a soft goat cheese)
  • anchovies
  • capers in oil
  • sesame seeds
  • wine vinegar
  • extra virgin olive oil

Bring a pot of water to a rolling boil over high heat.

Once boiling, add salt and cook the pasta according to the time indicated on the package (8-9 minutes).

Meanwhile, wash the lettuce under cool running water. Cut the head in half lengthwise: take the fresh, inner leaves from one half of the head and set them aside to garnish the dish; blanch the other half of the lettuce in lightly salted boiling water for 10 minutes.

Once cooked, blend the blanched lettuce with the spreadable cheese and a drizzle of olive oil until you obtain a smooth cream.

In a bowl, combine the pasta with the green sauce, then season with the capers, olives, and anchovies. Toss everything together cold.

Plate the pasta, finishing with the sesame seeds and the raw inner lettuce leaves.

Garnish with an emulsion of oil and vinegar, just like a salad.
