Mancini Mista

with Octopus Tentacles and Potatoes

The shapes of Mancini Mista pasta make you want to take succulent bites of the octopus tentacles, in a classic pairing with the sweetness of potato.


Ingredients

2 servings
  • 200 g (0.44 lb) of Mancini Mista pasta
  • 5 g of salt per liter of water (approximately 1 teaspoon per quart of water) based on pot capacity
  • 1 onion
  • 1 potato
  • 2 octopus tentacles (already cooked)
  • extra virgin olive oil

Bring a pot of water to a rolling boil over high heat.

Once boiling, add salt and cook the pasta according to the time indicated on the package (8-9 minutes).

In the meantime, in a pan, sauté the onion cut into regular pieces, then add the potatoes cut into small cubes and let them brown, keeping them slightly crispy.

Add the octopus, cooked for 30 minutes in lightly salted water, and sear it for a few minutes.

Finally, toss the pasta with the octopus and potatoes.
