Russian “Olivier” Salad style

The delightful creaminess of a “fake” mayonnaise beautifully coats the various shapes of Mista Mancini pasta, while the fresh crunch of vegetables bursts on the palate.


Ingredients

2 servings
  • 200 g (0.44 lb) of Mancini Mista pasta
  • 5 g of salt per liter of water (approximately 1 teaspoon per quart of water) based on pot capacity
  • 1 carrot
  • 1 celery stalk
  • 3 radishes
  • 1/3 fennel bulb
  • extra virgin olive oil

Ingredients for the “Fake” Mayonnaise:

  • 50 cl (approximately 1/4 cup) whole milk
  • 1 small clove of garlic (tip only)
  • extra virgin olive oil

The dish will be ready in 15 minutes.

Bring a pot of water to a rolling boil over high heat.

Once boiling, add salt and cook the pasta according to the time indicated on the package (8-9 minutes).

Meanwhile, prepare the “fake” mayonnaise. Pour the milk into a tall container, add the tip of a garlic clove, and use an immersion blender to whisk. Slowly drizzle in olive oil until the mixture becomes creamy and thick. Season with salt to taste.

Dice the raw vegetables into small cubes and place them in a bowl.

Once the pasta is cooked, drain it and add it to the bowl with the vegetables

Add the “fake” mayonnaise to the pasta and vegetables. Toss everything together gently to coat and serve.
